  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cream or coconut milk (optional)

Instructions

  1. In a large pot, heat some oil over medium heat. Add the chopped onion and garlic. Sauté until soft.
  2. Add the diced potatoes, carrots, celery, vegetable broth, thyme, salt, and black pepper. Bring to a boil.
  3. Reduce heat and let it simmer until potatoes are tender, about 20 minutes.
  4. If using, stir in the cream or coconut milk before serving.
  5. Serve hot and enjoy!
