Vegan Pumpkin Wild Rice Soup

  • 2 cups pumpkin puree
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon thyme
  • 1 teaspoon sage
  • 1 cup coconut milk
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté the onion and garlic until translucent.
  2. Add the wild rice, broth, pumpkin puree, thyme, and sage.
  3. Bring to a boil, then reduce heat and simmer for 45 minutes.
  4. Stir in the coconut milk and season with salt and pepper. Cook for an additional 10 minutes.
  5. Serve hot and enjoy!
