  • 1 cup vanilla pudding mix
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 cup vegetable oil
  • 1 cup sugar
  • 3 eggs

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the pumpkin, vanilla pudding mix, and eggs.
  3. Add the oil and sugar, and mix until well combined.
  4. In another bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  5. Gradually add the dry ingredients to the wet mixture and stir until just combined.
  6. Pour the batter into a greased loaf pan.
  7. Bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let cool for 10 minutes, then remove from the pan and allow to cool completely on a wire rack.
