The Best Chili’s Southwest Eggrolls recipe that’s healthier and just as delicious!

Ingredients

  • 1 cup cooked chicken, shredded
  • 1 cup black beans, rinsed and drained
  • 1 cup corn, frozen or canned
  • 1 cup shredded cheddar cheese
  • 1 teaspoon taco seasoning
  • 8 small flour tortillas
  • 1 egg, beaten (for sealing)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, mix the chicken, black beans, corn, cheese, and taco seasoning.
  3. Lay a tortilla flat, place a portion of filling, and roll it tightly.
  4. Brush or dip the edges in the beaten egg and seal the ends.
  5. Place the eggrolls on a baking sheet and bake for 15-20 minutes until golden brown.

Notes

  • Serve with salsa or guacamole for dipping.
  • These can be made ahead and frozen before baking.
