  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp cloves
  • 1/2 cup walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine pumpkin puree, sugar, and vegetable oil. Mix well.
  3. Beat in the eggs, one at a time, until fully incorporated.
  4. In a separate bowl, whisk together flour, baking soda, baking powder, salt, and spices.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Fold in walnuts if using.
  7. Pour the batter into a greased loaf pan.
  8. Bake for 60-70 minutes or until a toothpick comes out clean.
  9. Let it cool in the pan for 10 minutes before transferring to a wire rack.

Notes

  • For added sweetness, you can include chocolate chips.
  • This bread can be served warm or at room temperature.
