  • 1 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix pumpkin puree, granulated sugar, brown sugar, and vegetable oil.
  3. Add eggs one at a time, beating well after each addition.
  4. In a separate bowl, combine flour, baking soda, baking powder, salt, and spices.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  6. If using, fold in walnuts.
  7. Pour the batter into greased loaf pans.
  8. Bake for 60-75 minutes or until a toothpick comes out clean.
  9. Let cool in the pan for 10 minutes before transferring to a wire rack.
