Summer Orzo Salad

A delightful and refreshing summer dish featuring orzo pasta, fresh vegetables, and turkey bacon, perfect for picnics and gatherings.

Ingredients

  • 1 cup orzo pasta
  • 4 slices turkey bacon
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Cook the orzo according to package instructions. Drain and set aside to cool.
  2. In a skillet, cook the turkey bacon until crispy. Remove and crumble.
  3. In a large bowl, combine the cooled orzo, cherry tomatoes, cucumber, red onion, parsley, olive oil, lemon juice, salt, and pepper.
  4. Add the crumbled turkey bacon and stir well to combine.
  5. Chill the salad in the refrigerator for at least 30 minutes before serving.

Notes

  • Feel free to add any other vegetables you like.
  • For a vegetarian option, omit the turkey bacon.
