- 1 cup orzo pasta
- 4 slices turkey bacon
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Cook the orzo according to package instructions. Drain and set aside to cool.
- In a skillet, cook the turkey bacon until crispy. Remove and crumble.
- In a large bowl, combine the cooled orzo, cherry tomatoes, cucumber, red onion, parsley, olive oil, lemon juice, salt, and pepper.
- Add the crumbled turkey bacon and stir well to combine.
- Chill the salad in the refrigerator for at least 30 minutes before serving.
Notes

- For a vegetarian option, omit the turkey bacon.
