Spinach Bacon Pumpkin Mac and Cheese

A delicious blend of spinach, bacon, and pumpkin in creamy mac and cheese.

Ingredients

  • 8 ounces elbow macaroni
  • 4 slices bacon
  • 2 cups fresh spinach
  • 1 cup pumpkin puree
  • 2 cups shredded cheddar cheese
  • 1 cup milk
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Cook the macaroni according to package instructions. Drain and set aside.
  2. In a skillet, cook the bacon until crispy. Remove and crumble.
  3. In the same skillet, add spinach and cook until wilted.
  4. In a large bowl, mix macaroni, pumpkin puree, milk, garlic powder, salt, and pepper.
  5. Stir in the spinach and crumbled bacon. Add shredded cheese and mix well.
  6. Transfer to a baking dish and top with remaining cheese.
  7. Bake at 350°F for 20-25 minutes until bubbly and golden.

Notes

  • Feel free to add more vegetables or different types of cheese.
