- 8 ounces elbow macaroni
- 4 slices bacon
- 2 cups fresh spinach
- 1 cup pumpkin puree
- 2 cups shredded cheddar cheese
- 1 cup milk
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Cook the macaroni according to package instructions. Drain and set aside.
- In a skillet, cook the bacon until crispy. Remove and crumble.
- In the same skillet, add spinach and cook until wilted.
- In a large bowl, mix macaroni, pumpkin puree, milk, garlic powder, salt, and pepper.
- Stir in the spinach and crumbled bacon. Add shredded cheese and mix well.
- Transfer to a baking dish and top with remaining cheese.
- Bake at 350°F for 20-25 minutes until bubbly and golden.
