Spiced Autumn Pumpkin Cheesecake

A creamy and flavorful pumpkin cheesecake enriched with warm spices, perfect for the fall season.

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 cups pumpkin puree
  • 1 cup cream cheese, softened
  • 1 cup granulated sugar
  • ¾ cup brown sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • ¼ teaspoon ground cloves
  • ½ teaspoon salt
  • 1 cup sour cream

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix graham cracker crumbs and melted butter, then press into the bottom of a 9-inch springform pan.
  3. In a large mixing bowl, combine pumpkin puree, cream cheese, granulated sugar, and brown sugar. Mix until smooth.
  4. Add eggs one at a time, mixing well after each addition. Then, mix in the vanilla extract and spices.
  5. Pour the filling into the prepared crust and smooth the top.
  6. Bake for 50-60 minutes or until the center is set but still slightly jiggly.
  7. Remove from oven and let it cool to room temperature. Refrigerate for at least 4 hours or overnight.

Notes

  • Adding a dollop of whipped cream on top enhances the flavor.
  • Best served chilled.
