- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups pumpkin puree
- 1 cup cream cheese, softened
- 1 cup granulated sugar
- ¾ cup brown sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ¼ teaspoon ground ginger
- ¼ teaspoon ground cloves
- ½ teaspoon salt
- 1 cup sour cream
- Preheat your oven to 350°F (175°C).
- In a bowl, mix graham cracker crumbs and melted butter, then press into the bottom of a 9-inch springform pan.
- In a large mixing bowl, combine pumpkin puree, cream cheese, granulated sugar, and brown sugar. Mix until smooth.
- Add eggs one at a time, mixing well after each addition. Then, mix in the vanilla extract and spices.
- Pour the filling into the prepared crust and smooth the top.
- Bake for 50-60 minutes or until the center is set but still slightly jiggly.
- Remove from oven and let it cool to room temperature. Refrigerate for at least 4 hours or overnight.
Notes
- Adding a dollop of whipped cream on top enhances the flavor.
