Slow Cooker Chicken Burrito Bowl

A hearty and flavorful slow cooker chicken burrito bowl that the whole family will love!

Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1 cup salsa
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 tablespoon taco seasoning
  • 2 cups cooked rice or cauliflower rice
  • 1 cup shredded cheese, optional
  • 1 avocado, sliced, for serving
  • 1/4 cup chopped fresh cilantro, for garnish

Instructions

  1. Place the chicken breasts in the slow cooker.
  2. Top with salsa, black beans, corn, and taco seasoning.
  3. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  4. Once cooked, shred the chicken with two forks and stir to combine with the other ingredients.
  5. Serve over cooked rice and top with cheese, avocado, and cilantro.

Notes

  • For a spicier kick, add jalapeños or hot sauce.
  • To make it even quicker, use pre-cooked rotisserie chicken.
