- 2 pounds boneless, skinless chicken breasts
- 1 cup salsa
- 1 can (15 ounces) black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 tablespoon taco seasoning
- 2 cups cooked rice or cauliflower rice
- 1 cup shredded cheese, optional
- 1 avocado, sliced, for serving
- 1/4 cup chopped fresh cilantro, for garnish
- Place the chicken breasts in the slow cooker.
- Top with salsa, black beans, corn, and taco seasoning.
- Cover and cook on low for 6-7 hours or high for 3-4 hours.
- Once cooked, shred the chicken with two forks and stir to combine with the other ingredients.
- Serve over cooked rice and top with cheese, avocado, and cilantro.
Notes
- For a spicier kick, add jalapeños or hot sauce.
- To make it even quicker, use pre-cooked rotisserie chicken.
