  • 2 pounds beef chuck roast
  • 1 tablespoon olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 4 slices of bread
  • 1 cup mashed potatoes

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Sear the beef for 3-4 minutes on each side until browned.
  2. Transfer the beef to the slow cooker.
  3. Add onions and garlic to the skillet and sauté for 2-3 minutes.
  4. Pour in the beef broth and Worcestershire sauce, scraping the bottom of the skillet.
  5. Season with salt, black pepper, and thyme, then pour the mixture over the beef.
  6. Cover and cook on low for 8 hours or high for 4 hours.
  7. Once cooked, shred the beef with two forks.
  8. Serve the beef over toasted bread topped with mashed potatoes.
