Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine pumpkin puree, vegetable oil, eggs, sugar, and vanilla extract.
  3. In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  4. Add the dry ingredients to the wet ingredients and mix until just combined.
  5. In a small bowl, mix the brown sugar and cinnamon for the swirl.
  6. Pour half of the pumpkin batter into greased mini loaf pans, sprinkle with the cinnamon-sugar mixture, and layer the remaining batter on top.
