Roasted Potato Salad

A delicious roasted potato salad featuring turkey bacon and fresh herbs, perfect for any gathering.

Ingredients

  • 2 pounds baby potatoes
  • 4 strips turkey bacon
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup green onions, sliced
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash and cut the potatoes into halves or quarters.
  3. Toss the potatoes with olive oil, garlic powder, salt, and pepper.
  4. Spread them on a baking sheet and roast for 25-30 minutes until golden brown.
  5. While the potatoes are roasting, cook the turkey bacon until crispy, then crumble it.
  6. Once the potatoes are done, let them cool slightly, then combine them in a bowl with crumbled bacon, parsley, and green onions.
  7. Drizzle with apple cider vinegar and toss everything together before serving.

Notes

  • For extra flavor, add mustard to the dressing.
