- 2 pounds baby potatoes
- 4 strips turkey bacon
- 1/4 cup fresh parsley, chopped
- 1/4 cup green onions, sliced
- 1/4 cup olive oil
- 2 tablespoons apple cider vinegar
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Preheat the oven to 425°F (220°C).
- Wash and cut the potatoes into halves or quarters.
- Toss the potatoes with olive oil, garlic powder, salt, and pepper.
- Spread them on a baking sheet and roast for 25-30 minutes until golden brown.
- While the potatoes are roasting, cook the turkey bacon until crispy, then crumble it.
- Once the potatoes are done, let them cool slightly, then combine them in a bowl with crumbled bacon, parsley, and green onions.
- Drizzle with apple cider vinegar and toss everything together before serving.
