  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 cup pumpkin puree
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup chopped walnuts (optional)
  • 1/2 cup flour (for streusel)
  • 1/4 cup brown sugar (for streusel)
  • 1/4 cup butter (for streusel)
  • 1 teaspoon ground cinnamon (for streusel)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, mix together the flour, baking powder, baking soda, spices, and salt.
  3. In another bowl, whisk together the sugars, pumpkin, oil, eggs, and vanilla.
  4. Combine the wet and dry ingredients until just mixed.
  5. In a separate bowl, mix the streusel ingredients until crumbly.
  6. Pour half of the batter into the prepared pan, sprinkle half of the streusel, then add the remaining batter and top with the remaining streusel.
  7. Bake for 60 minutes or until a toothpick comes out clean.
  8. Let cool before slicing and serving.

Notes

  • Can substitute walnuts with pecans if preferred.
  • For extra moistness, use fresh pumpkin puree.
