- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1 cup pumpkin puree
- 1/2 cup vegetable oil
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup chopped walnuts (optional)
- 1/2 cup flour (for streusel)
- 1/4 cup brown sugar (for streusel)
- 1/4 cup butter (for streusel)
- 1 teaspoon ground cinnamon (for streusel)
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- In a bowl, mix together the flour, baking powder, baking soda, spices, and salt.
- In another bowl, whisk together the sugars, pumpkin, oil, eggs, and vanilla.
- Combine the wet and dry ingredients until just mixed.
- In a separate bowl, mix the streusel ingredients until crumbly.
- Pour half of the batter into the prepared pan, sprinkle half of the streusel, then add the remaining batter and top with the remaining streusel.
- Bake for 60 minutes or until a toothpick comes out clean.
- Let cool before slicing and serving.
Notes
- Can substitute walnuts with pecans if preferred.
- For extra moistness, use fresh pumpkin puree.
