  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 cup milk
  • 2 eggs
  • 1/2 cup sugar
  • 1/4 cup melted butter
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 cup honey
  • 1/4 cup unsalted butter (for the honey butter)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, mix together the pumpkin puree, eggs, milk, and melted butter.
  3. In another bowl, combine the cornmeal, flour, sugar, baking powder, salt, and cinnamon.
  4. Gradually add the dry ingredients to the wet ingredients and stir until just combined.
  5. Pour the batter into a greased baking pan and smooth the top.
  6. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  7. For the cinnamon honey butter, mix together the softened butter, honey, and cinnamon in a small bowl until well combined.
  8. Serve the cornbread warm with the cinnamon honey butter.

Notes

  • For a sweeter cornbread, add more sugar to taste.
  • Can be served as a side with soups or stews.
