- 1 cup pumpkin puree
- 1 cup cornmeal
- 1 cup all-purpose flour
- 1 cup milk
- 2 eggs
- 1/2 cup sugar
- 1/4 cup melted butter
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 cup honey
- 1/4 cup unsalted butter (for the honey butter)
- Preheat your oven to 400°F (200°C).
- In a large bowl, mix together the pumpkin puree, eggs, milk, and melted butter.
- In another bowl, combine the cornmeal, flour, sugar, baking powder, salt, and cinnamon.
- Gradually add the dry ingredients to the wet ingredients and stir until just combined.
- Pour the batter into a greased baking pan and smooth the top.
- Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
- For the cinnamon honey butter, mix together the softened butter, honey, and cinnamon in a small bowl until well combined.
- Serve the cornbread warm with the cinnamon honey butter.
