  • 8 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a baking pan.
  2. In a large bowl, mix together the pumpkin puree, granulated sugar, brown sugar, and vegetable oil.
  3. Add in the eggs and vanilla extract, mixing well until combined.
  4. In another bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Pour the batter into the prepared baking pan and spread it evenly.
  7. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  8. Let the bars cool completely.
  9. For the frosting, beat together the cream cheese, butter, powdered sugar, and vanilla extract until smooth and creamy.
  10. Spread the frosting over the cooled pumpkin bars and cut into squares to serve.
