Pork Adobo Tacos

Ingredients

  • 1 pound pork shoulder
  • 1/2 cup soy sauce
  • 1/4 cup vinegar
  • 4 cloves garlic, minced
  • 1 teaspoon black pepper
  • 1/2 teaspoon bay leaves
  • 10 corn tortillas
  • 1 cup diced onions
  • 1 cup chopped cilantro

Instructions

  1. In a large bowl, combine the pork shoulder with soy sauce, vinegar, garlic, black pepper, and bay leaves. Marinate for at least 30 minutes.
  2. Transfer the marinated pork to a pot and add 1 cup of water. Cook over medium heat until the pork is tender, about 1.5 to 2 hours.
  3. Once tender, shred the pork with two forks.
  4. Warm the corn tortillas in a skillet or microwave.
  5. Assemble the tacos by placing shredded pork on each tortilla, then topping with onions and cilantro.
