  • 2 cups cherry tomatoes
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt

  • 1 cup hummus
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Spread the cherry tomatoes on a baking sheet, drizzle with olive oil, and season with salt and black pepper.
  3. Roast the tomatoes in the oven for about 20 minutes until they are soft and slightly charred.
  4. In a pot of simmering water, carefully crack the eggs and poach for about 3-4 minutes until the whites are set.
