- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1 cup granulated sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 cup LIBBY’S 100% Pure Pumpkin
- 1/2 cup chopped walnuts (optional)
- Preheat the oven to 350°F (175°C).
- In a bowl, mix the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- In another bowl, combine the sugar, oil, and eggs until well blended.
- Stir in the pumpkin, then add the dry ingredients, mixing until just combined.
- If desired, fold in the chopped walnuts.
- Pour the batter into a greased loaf pan.
- Bake for 60-70 minutes or until a toothpick inserted in the center comes out clean.
- Let cool for 10 minutes before removing from the pan to cool completely.
