Perfect LIBBY'S Pumpkin Bread

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 cup LIBBY’S 100% Pure Pumpkin
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, combine the sugar, oil, and eggs until well blended.
  4. Stir in the pumpkin, then add the dry ingredients, mixing until just combined.
  5. If desired, fold in the chopped walnuts.
  6. Pour the batter into a greased loaf pan.
  7. Bake for 60-70 minutes or until a toothpick inserted in the center comes out clean.
  8. Let cool for 10 minutes before removing from the pan to cool completely.

Notes

  • For a sweeter bread, increase the sugar to 1 1/4 cups.
  • Serve with cream cheese for added flavor.
