OUTBACK POTATO SOUP

This Outback Potato Soup features a creamy base, loaded with crispy turkey bacon and tender potatoes, creating a delightful comfort food experience.

Ingredients

  • 4 large russet potatoes
  • 6 slices turkey bacon
  • 1 cup onion, diced
  • 1 cup celery, diced
  • 3 cups chicken broth
  • 2 cups heavy cream
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 3 green onions, chopped for garnish

Instructions

  1. In a large pot, cook the turkey bacon until crisp. Remove and crumble, leaving the drippings.
  2. Add onions and celery to the pot and sauté until softened.
  3. Add diced potatoes and chicken broth, then bring to a boil.
  4. Reduce heat and simmer until potatoes are tender.
  5. Blend the soup with an immersion blender until creamy.
  6. Stir in heavy cream, garlic powder, salt, and pepper. Heat through.
  7. Serve topped with crumbled turkey bacon and green onions.
