Orange Cardamom Fig Cake

A moist and flavorful cake that combines the unique tastes of orange, cardamom, and figs for a spectacular dessert.

  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cardamom
  • 1 cup unsalted butter, softened
  • 4 large eggs
  • 1/2 cup fresh orange juice
  • 1 tablespoon orange zest
  • 1 cup dried figs, chopped

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a cake pan.
  2. In a bowl, mix flour, baking powder, baking soda, salt, and cardamom.
  3. In another bowl, cream together butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition.
  5. Stir in orange juice and zest, then gradually add the dry ingredients.
  6. Fold in chopped figs gently.
  7. Pour batter into the prepared pan and smooth the top.
  8. Bake for 45-50 minutes or until a toothpick comes out clean.
  9. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

  • For added flavor, serve with a cream cheese frosting.
  • Using fresh figs instead of dried will give a different texture.
