1 cup chocolate graham cracker crumbs
1/4 cup unsalted butter, melted
8 ounces cream cheese, softened
1/2 cup granulated sugar
1 teaspoon vanilla extract
1/2 cup sour cream
1 cup semi-sweet chocolate chips
1/4 cup heavy cream
Instructions
Preheat the oven to 325°F (163°C).
In a bowl, combine chocolate graham cracker crumbs and melted butter. Press into the bottom of mini muffin tins to form a crust.
In a mixing bowl, beat together cream cheese, sugar, and vanilla until smooth.
Add in sour cream and mix until well combined.
Melt semi-sweet chocolate chips with heavy cream in a microwave until smooth and drizzle over the cheesecake mixture. Swirl to combine.
Pour the cheesecake batter into the crusts and bake for 15-20 minutes until set.
Let them cool, then refrigerate for at least 2 hours before serving.
Notes
For an extra touch, top with whipped cream or chocolate shavings before serving.
Make sure to soften the cream cheese properly to avoid lumps.
