Mexican Street Corn Pasta Salad

A refreshing and flavorful twist on traditional pasta salad, featuring Mexican street corn and crispy turkey bacon.

  • 1 cup corn kernels, fresh or canned
  • 4 slices turkey bacon, cooked and crumbled
  • 1 red bell pepper, diced
  • 1/2 cup red onion, diced
  • 1 jalapeño, finely chopped
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced
  • 1/2 cup mayonnaise
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cumin
  • Salt to taste

Instructions

  1. Cook pasta according to package instructions. Drain and set aside to cool.
  2. In a large bowl, combine cooled pasta, corn, turkey bacon, red bell pepper, red onion, jalapeño, and cilantro.
  3. In a separate bowl, mix lime juice, mayonnaise, chili powder, cumin, and salt.
  4. Pour the dressing over the pasta mixture and toss to combine.
  5. Refrigerate for at least 30 minutes before serving.
