Loaded Baked Potato Soup Bowls

A creamy and hearty loaded baked potato soup served in bowls, topped with turkey bacon and chicken ham.

  • 4 large russet potatoes
  • 6 slices turkey bacon
  • 1 cup chicken ham, diced
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 4 cups chicken broth
  • 1/2 cup green onions, chopped
  • 2 tablespoons butter
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder

Instructions

  1. Start by washing and pricking the potatoes with a fork, then bake them at 400°F for about 1 hour.
  2. While the potatoes bake, cook the turkey bacon in a skillet until crispy, then chop into pieces.
  3. In a large pot, melt butter over medium heat, then add diced chicken ham and cook for about 3 minutes.
  4. Add the chicken broth to the pot, followed by the baked potatoes once they are cool enough to handle; scoop out the insides and add them to the broth.
  5. Stir in the sour cream, black pepper, and garlic powder, then let simmer for 10 minutes.
  6. Top the soup with shredded cheese, turkey bacon, and green onions before serving.

Notes

  • This soup can be made ahead of time and stored in the refrigerator for up to 3 days.
  • For a vegetarian version, omit the bacon and chicken ham.
