  • 6 slices turkey bacon
  • 4 large eggs
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon chopped green onions

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet, cook the turkey bacon until crispy, then crumble it into small pieces.
  3. In a bowl, mix together hash browns, crumbled bacon, cheese, salt, and pepper.
  4. Press the hash brown mixture into the muffin tin to form cups.
  5. Bake for about 20 minutes or until the edges are golden brown.
  6. In a separate bowl, whisk the eggs and stir in the green onions.
  7. Pour the egg mixture into each hash brown cup.
  8. Bake for an additional 15-20 minutes until the eggs are set.
