Kielbasa Potato Soup

  • 1 pound kielbasa sausage
  • 4 cups diced potatoes
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups milk
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup shredded cheese (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add kielbasa and cook until browned.
  2. Add onions and garlic, sauté until translucent.
  3. Stir in the diced potatoes, chicken broth, and thyme. Bring to a boil.
  4. Reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  5. Stir in the milk and heat through. Season with salt and pepper.
