High Protein Creamy Taco Soup

A deliciously creamy and protein-packed taco soup featuring turkey bacon.

Ingredients

  • 1 pound turkey bacon
  • 1 cup onion, diced
  • 2 cups bell peppers, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cans black beans, rinsed
  • 1 can corn, drained
  • 2 cups diced tomatoes
  • 2 tablespoons taco seasoning
  • 1 cup sour cream
  • 1 cup shredded cheese

Instructions

  1. In a large pot, cook turkey bacon until crispy. Remove and crumble.
  2. Add onion, bell peppers, and garlic to the pot; sauté until softened.
  3. Stir in chicken broth, black beans, corn, tomatoes, and taco seasoning.
  4. Bring to a simmer and cook for 15 minutes.
  5. Stir in sour cream and half of the cheese.
  6. Serve topped with crumbled turkey bacon and remaining cheese.

Notes

  • For a spicier soup, add jalapeños.
  • Can be made ahead and stored in the refrigerator.
