- 4 medium potatoes, peeled and diced
- 1 cup cheddar cheese, shredded
- 4 strips turkey bacon, cooked and crumbled
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside, leaving the drippings in the pot.
- Add the chopped onion and garlic to the pot, sautéing until translucent.
- Stir in the diced potatoes and cook for a few minutes.
- Pour in the chicken broth and bring to a boil. Reduce heat and simmer until the potatoes are tender.
- Blend the soup with an immersion blender until smooth.
- Stir in the heavy cream, cheddar cheese, thyme, salt, and pepper. Heat gently until cheese is melted.
- Serve hot, topped with crumbled turkey bacon.
