Hearty Cheddar Garlic Herb Potato Soup Recipe

A delicious and comforting potato soup featuring cheddar cheese, garlic, and turkey bacon.

  • 4 medium potatoes, peeled and diced
  • 1 cup cheddar cheese, shredded
  • 4 strips turkey bacon, cooked and crumbled
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside, leaving the drippings in the pot.
  2. Add the chopped onion and garlic to the pot, sautéing until translucent.
  3. Stir in the diced potatoes and cook for a few minutes.
  4. Pour in the chicken broth and bring to a boil. Reduce heat and simmer until the potatoes are tender.
  5. Blend the soup with an immersion blender until smooth.
  6. Stir in the heavy cream, cheddar cheese, thyme, salt, and pepper. Heat gently until cheese is melted.
  7. Serve hot, topped with crumbled turkey bacon.

Notes

  • For a thicker soup, blend more of the potatoes.
  • Garnish with fresh herbs for added flavor.
