Healthy Pumpkin Oatmeal Bars

Ingredients

  • 1 cup rolled oats
  • 1 cup pumpkin puree
  • 1/2 cup almond milk
  • 1/4 cup honey or maple syrup
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
  • 1/2 cup nuts or chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine rolled oats, pumpkin puree, almond milk, honey or maple syrup, cinnamon, nutmeg, and salt.
  3. Mix until well combined. If using, fold in nuts or chocolate chips.
  4. Pour the mixture into a greased baking dish and spread evenly.
  5. Bake for 25-30 minutes or until golden brown.
  6. Allow to cool before slicing into bars.

Notes

  • These bars can be served warm or at room temperature.
  • For a healthier option, reduce the amount of sweetener.
