  • 1/2 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup honey or maple syrup
  • 2 eggs
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a mini muffin tin.
  2. In a large bowl, mix the pumpkin puree, honey (or maple syrup), and eggs until well combined.
  3. In another bowl, whisk together the almond flour, coconut flour, baking soda, cinnamon, nutmeg, and salt.
  4. Add the dry ingredients to the wet ingredients and mix until a dough forms.
  5. Fill each muffin cup about 3/4 full with the mixture.
  6. Bake for 15-18 minutes, or until a toothpick comes out clean.
  7. Let cool before removing from the tray.
