Healthy Chicken & Sweet Potato Rice Bowl

  • 2 cups cooked brown rice
  • 1 pound boneless chicken breast
  • 2 medium sweet potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 cups spinach
  • 1 avocado sliced

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and dice the sweet potatoes into cubes, then toss with olive oil, garlic powder, paprika, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes.
  3. Meanwhile, season the chicken breasts with salt and pepper, then grill or pan-sear them until cooked through, about 6-7 minutes per side.
  4. Once the chicken is cooked, let it rest for a few minutes before slicing it.
  5. In bowls, layer brown rice, roasted sweet potatoes, sliced chicken, spinach, and avocado.
