  • 1/2 cup honey or maple syrup
  • 1/4 cup melted coconut oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 1/2 cups whole wheat flour
  • 1/2 cup walnuts, chopped (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, mash the bananas and mix in the honey, coconut oil, eggs, and vanilla.
  3. Add the baking soda, salt, and cinnamon, stirring until combined.
  4. Gradually mix in the whole wheat flour until just combined.
  5. If using, fold in the walnuts.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes or until a toothpick comes out clean.
  8. Let cool before slicing and serving.
