- 1 pound ground chicken
- 1 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 tablespoon fresh oregano, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup orzo pasta
- 1 lemon (zest and juice)
- 2 tablespoons olive oil
- 2 cups chicken broth
- Preheat oven to 400°F (200°C).
- In a bowl, mix ground chicken, breadcrumbs, Parmesan, egg, garlic, oregano, salt, and pepper.
- Form into meatballs and place on a baking sheet.
