  • 1 pound ground chicken
  • 1 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tablespoon fresh oregano, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup orzo pasta
  • 1 lemon (zest and juice)
  • 2 tablespoons olive oil
  • 2 cups chicken broth

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, mix ground chicken, breadcrumbs, Parmesan, egg, garlic, oregano, salt, and pepper.
  3. Form into meatballs and place on a baking sheet.
  4. Bake for 20-25 minutes or until cooked through.
  5. While meatballs bake, heat olive oil in a pot and sauté orzo until lightly golden.
  6. Add chicken broth, bring to a boil, then reduce to simmer until orzo is tender.
  7. Add lemon zest and juice to cooked orzo and stir.
  8. Serve meatballs over lemon orzo.

Notes

  • For added freshness, garnish with chopped parsley before serving.
