- 1 pound beef sirloin
- 6 strips turkey bacon
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 8 ounces mushrooms, sliced
- 2 cups beef broth
- 1 cup sour cream
- 2 tablespoons Worcestershire sauce
- 2 tablespoons olive oil
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 pound egg noodles
- Cook the turkey bacon in a skillet over medium heat until crispy. Remove and set aside.
- In the same skillet, add olive oil and sauté the onions and garlic for 2-3 minutes.
- Add the sliced mushrooms and cook until softened.
- Cut the beef sirloin into strips and add to the skillet, browning on all sides.
- Stir in the beef broth, Worcestershire sauce, and paprika. Let it simmer for 10-15 minutes.
- Remove the pan from heat and stir in the sour cream until well combined.
- Cook the egg noodles according to package instructions, then drain.
- Serve the stroganoff over the noodles and top with the crispy turkey bacon.
Notes
- For a lighter version, you can use Greek yogurt instead of sour cream.
- Feel free to add more vegetables like peas or bell peppers.
