Feta & Cranberry Penne Salad with Orange Vinaigrette

A refreshing salad combining feta cheese and cranberries with a zesty orange vinaigrette, perfect for any occasion.

Ingredients

  • 8 ounces penne pasta
  • 1 cup feta cheese, crumbled
  • 1/2 cup dried cranberries
  • 1/4 cup red onion, diced
  • 1/4 cup fresh parsley, chopped
  • 1/3 cup olive oil
  • 1/4 cup orange juice
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • Salt to taste
  • Pepper to taste

Instructions

  1. Cook the penne pasta according to package instructions. Drain and set aside to cool.
  2. In a large bowl, combine the cooled penne, feta cheese, cranberries, red onion, and parsley.
  3. In a separate bowl, whisk together the olive oil, orange juice, apple cider vinegar, Dijon mustard, salt, and pepper.
  4. Pour the vinaigrette over the salad and toss until well combined.
  5. Serve immediately or chill in the refrigerator for 30 minutes before serving.
