- 1 pound boneless, skinless chicken breasts
- 4 slices turkey bacon, chopped
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 cup frozen peas
- 1 cup potatoes, diced
- 1 tablespoon garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 can (10.5 oz) cream of chicken soup
- 1 cup chicken broth
- 1 package refrigerated pie crusts
- In a slow cooker, combine chicken, bacon, carrots, celery, peas, and potatoes.
- Add garlic, thyme, salt, pepper, cream of chicken soup, and chicken broth. Stir well to combine.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is cooked through and vegetables are tender.
- Shred the chicken in the slow cooker using two forks.
- Roll out pie crusts on a floured surface and cut to fit over the pot pie filling.
- Cover the filling with the pie crust and cut slits to allow steam to escape.
- Return to slow cooker and cook on high for an additional 30 minutes to 1 hour until crust is golden brown.
Notes
- For a thicker filling, add a cornstarch slurry before adding the pie crust.
- Feel free to substitute with other vegetables as desired.
