  • 1 pound fresh salmon, cut into small pieces
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon sesame oil
  • 1 teaspoon rice vinegar
  • 1/2 cup cucumber, diced
  • 1/4 cup green onions, chopped
  • 1 tablespoon sesame seeds

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook sushi rice according to package instructions.
  3. In a bowl, mix the salmon pieces with soy sauce, olive oil, sesame oil, and rice vinegar.
  4. In a muffin tin, press the cooked sushi rice into cup shapes.
  5. Fill each rice cup with the salmon mixture.
  6. Bake in the preheated oven for 15-20 minutes until the salmon is cooked through.
  7. Remove from the oven and let cool slightly.
  8. Top with diced cucumber, green onions, and sesame seeds before serving.

Notes

  • For added flavor, marinate the salmon for 30 minutes before baking.
