- 1 pound fresh salmon, cut into small pieces
- 1 tablespoon soy sauce
- 1 tablespoon olive oil
- 1 teaspoon sesame oil
- 1 teaspoon rice vinegar
- 1/2 cup cucumber, diced
- 1/4 cup green onions, chopped
- 1 tablespoon sesame seeds
- Preheat your oven to 375°F (190°C).
- Cook sushi rice according to package instructions.
- In a bowl, mix the salmon pieces with soy sauce, olive oil, sesame oil, and rice vinegar.
- In a muffin tin, press the cooked sushi rice into cup shapes.
- Fill each rice cup with the salmon mixture.
