  • 2 cups black beans
  • 1 cup turkey bacon, chopped

  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • Salt to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, heat the olive oil over medium heat and add turkey bacon. Cook until crispy.
  3. Add rice, black beans, vegetable broth, garlic powder, onion powder, cumin, and salt to the skillet. Stir to combine.
  4. Transfer the mixture to a baking dish and sprinkle cheese on top.
  5. Bake for 25-30 minutes, or until the cheese is bubbly and golden.
  6. Let it cool for a few minutes before serving.

Notes

  • For extra flavor, consider adding diced tomatoes or bell peppers.
  • This dish can be made vegetarian by omitting the turkey bacon.
