Creamy Potato Soup

A comforting and creamy potato soup made with turkey bacon for a delicious twist.

  • 4 large potatoes
  • 1 cup turkey bacon, diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 tablespoon butter
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy.
  2. Add chopped onions and garlic, cook until softened.
  3. Peel and chop the potatoes, add them to the pot along with the chicken broth.
  4. Bring to a boil and then reduce heat, simmering until potatoes are tender.
  5. Stir in the heavy cream and butter, then mash some of the potatoes for a creamy texture.
  6. Season with salt and pepper to taste before serving.
