- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon salt
- 8 ounces cream cheese, softened
- 1/4 cup powdered sugar
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine the pumpkin puree, granulated sugar, brown sugar, and vegetable oil.
- Add eggs one at a time, mixing well.
- In another bowl, mix the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- In a separate bowl, beat the cream cheese with powdered sugar until smooth.
- Pour half of the pumpkin batter into a greased loaf pan.
- Spread the cream cheese mixture over the batter evenly.
- Top with the remaining pumpkin batter.
