Cream Cheese-Filled Pumpkin Bread

  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 8 ounces cream cheese, softened
  • 1/4 cup powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the pumpkin puree, granulated sugar, brown sugar, and vegetable oil.
  3. Add eggs one at a time, mixing well.
  4. In another bowl, mix the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. In a separate bowl, beat the cream cheese with powdered sugar until smooth.
  7. Pour half of the pumpkin batter into a greased loaf pan.
  8. Spread the cream cheese mixture over the batter evenly.
  9. Top with the remaining pumpkin batter.
  10. Bake for 50-60 minutes or until a toothpick inserted comes out clean.
  11. Allow to cool before slicing and serving.

Notes

  • For extra flavor, add chopped walnuts or pecans.
