Cinnamon Swirl Pumpkin Bread Mini Loaves

  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/4 cup sugar (for swirl)
  • 1 tablespoon ground cinnamon (for swirl)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease mini loaf pans.
  2. In a large bowl, mix pumpkin puree, granulated sugar, brown sugar, and vegetable oil.
  3. Add eggs and vanilla extract, then mix until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, baking powder, ground cinnamon, ground nutmeg, and salt.
  5. Slowly add the dry ingredients to the wet ingredients and mix until just combined.
  6. In a small bowl, combine the sugar and ground cinnamon for the swirl.
  7. Pour half of the batter into the prepared pans, sprinkle with cinnamon sugar, then top with the remaining batter.
  8. Use a knife to gently swirl the batter.
  9. Bake for 30-35 minutes or until a toothpick comes out clean.
  10. Allow to cool before serving.
