  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/3 cup cinnamon sugar mixture for swirling

Instructions

  1. Preheat your oven to 350°F (175°C) and grease mini loaf pans.
  2. In a large bowl, whisk together pumpkin puree, sugar, brown sugar, oil, eggs, and vanilla extract until smooth.
  3. In a separate bowl, combine flour, baking soda, cinnamon, nutmeg, and salt.
  4. Gradually add dry ingredients to wet ingredients, mixing until just combined.
  5. Pour half the batter into the prepared pans and sprinkle with cinnamon sugar mixture.
  6. Add the remaining batter and top with more cinnamon sugar.
  7. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow to cool before removing from the pans.

Notes

  • For an extra cinnamon flavor, you can add more ground cinnamon to the batter.
