- 1 cup pumpkin puree
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1/3 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1/3 cup cinnamon sugar mixture for swirling
- Preheat your oven to 350°F (175°C) and grease mini loaf pans.
- In a large bowl, whisk together pumpkin puree, sugar, brown sugar, oil, eggs, and vanilla extract until smooth.
- In a separate bowl, combine flour, baking soda, cinnamon, nutmeg, and salt.
- Gradually add dry ingredients to wet ingredients, mixing until just combined.
- Pour half the batter into the prepared pans and sprinkle with cinnamon sugar mixture.
- Add the remaining batter and top with more cinnamon sugar.
