- 1 cup fresh spinach
- 1 cup all-purpose flour
- 1/2 cup cocoa powder
- 1/2 cup sugar
- 1/4 cup vegetable oil
- 1/2 cup milk
- 2 eggs
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup chocolate chips
- Preheat the oven to 350°F (175°C).
- In a blender, combine spinach, eggs, milk, and vegetable oil until smooth.
- In a large bowl, mix flour, cocoa powder, sugar, baking powder, and salt.
- Combine the wet and dry ingredients and mix until just combined.
- Fold in the chocolate chips.
- Pour the batter into a muffin tin lined with paper liners.
- Bake for 20-25 minutes or until a toothpick inserted comes out clean.
