  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 cup sugar
  • 1/4 cup vegetable oil
  • 1/2 cup milk
  • 2 eggs
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a blender, combine spinach, eggs, milk, and vegetable oil until smooth.
  3. In a large bowl, mix flour, cocoa powder, sugar, baking powder, and salt.
  4. Combine the wet and dry ingredients and mix until just combined.
  5. Fold in the chocolate chips.
  6. Pour the batter into a muffin tin lined with paper liners.
  7. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
  8. Let cool before serving.

Notes

  • For extra chocolate flavor, add more chocolate chips.
  • Can substitute spinach with kale if desired.
