Cheddar Garlic Herb Potato Soup

  • 1 cup chopped turkey bacon
  • 1 cup shredded cheddar cheese
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • salt to taste
  • pepper to taste

Instructions

  1. In a large pot, cook turkey bacon over medium heat until crispy. Remove and set aside.
  2. Add onion and garlic to the pot and sauté until translucent.
  3. Add diced potatoes and chicken broth. Bring to a boil.
  4. Reduce heat and simmer until potatoes are tender, about 15 minutes.
  5. Stir in cream, cheese, thyme, salt, and pepper until cheese melts.
  6. Top with crumbled bacon before serving.
