  • 4 large potatoes, peeled and diced
  • 1 cup turkey bacon, chopped
  • 1 cup chicken ham, diced
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 teaspoons Cajun seasoning
  • 1 tablespoon olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the turkey bacon and cook until crispy. Remove and set aside.
  3. In the same pot, add onion and garlic, sautéing until translucent.
  4. Add the diced potatoes and chicken ham, stirring for a few minutes.
  5. Pour in the chicken broth and bring to a boil.
  6. Reduce heat and simmer until potatoes are tender.
  7. Blend the soup with an immersion blender until smooth.
  8. Stir in the heavy cream and Cajun seasoning.
  9. Add back the turkey bacon and heat through. Season with salt and pepper to taste.
  10. Serve hot and enjoy!
