  • 2 cups fresh blueberries

  • 1/2 cup almond flour

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the rolled oats, Greek yogurt, honey, and vanilla extract.
  3. In another bowl, combine the almond flour, baking powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in the blueberries gently.
  6. Fill the muffin tin about 3/4 full with the batter.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
