  • 16 ounces cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 2 cups blueberries
  • 1 cup oats
  • 1/2 cup brown sugar
  • 1/4 cup flour
  • 1 teaspoon cinnamon

Instructions

  1. Preheat the oven to 325°F (162°C).
  2. In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Press mixture into the bottom of a 9-inch springform pan.
  3. In another bowl, beat cream cheese until smooth. Gradually add sugar and vanilla, mixing well.
  4. Add eggs one at a time, beating well after each addition.
  5. Fold in blueberries gently.
  6. Pour cream cheese mixture over the crust in the springform pan.
  7. To make the crumble, combine oats, brown sugar, flour, and cinnamon in a bowl. Sprinkle over the cheesecake.
  8. Bake for 55-60 minutes or until the center is set. Let it cool, then refrigerate for at least 4 hours before serving.
