  • 1 cup heavy cream

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Season the pork tenderloin with salt and pepper.
  3. In an oven-safe skillet, heat olive oil over medium-high heat. Sear the pork until browned on all sides.
  4. Transfer the skillet to the oven and roast for about 20-25 minutes until the internal temperature reaches 145°F (63°C).
  5. Remove the pork and let it rest. Deglaze the skillet with Dijon mustard and cream, simmering until thickened.
