  • 2 pounds baby potatoes
  • 4 slices turkey bacon
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 1 garlic clove, minced
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup red onion, diced
  • 1/4 cup fresh parsley, chopped

Instructions

  1. In a large pot, bring salted water to a boil. Add baby potatoes and cook until fork-tender, about 15 minutes. Drain and let cool.
  2. Cook turkey bacon in a skillet until crispy, then crumble into pieces.
  3. In a bowl, whisk together balsamic vinegar, olive oil, garlic, Dijon mustard, salt, and pepper.
  4. Once potatoes are cool, cut them into halves or quarters and place them in a large bowl.
  5. Add crumbled turkey bacon, diced red onion, and chopped parsley to the potatoes.
  6. Pour the balsamic dressing over the salad and toss gently to combine.
  7. Chill in the refrigerator for at least 30 minutes before serving.
