  • 1/2 cup pumpkin puree
  • 1/2 cup apple, diced
  • 1/4 cup sugar
  • 1/4 cup brown sugar
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 1/4 cup vegetable oil
  • 1 egg
  • 1/2 tsp vanilla extract
  • 1/4 cup oats
  • 2 tbsp brown sugar (for topping)
  • 1 tbsp butter (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a mixing bowl, combine the flour, pumpkin puree, diced apple, sugars, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, whisk together the oil, egg, and vanilla.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Spoon the batter into the muffin liners, filling them about 2/3 full.
  6. In a small bowl, mix the oats, brown sugar, and butter for the streusel topping.
  7. Sprinkle the streusel mixture on top of the muffin batter.
  8. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  9. Allow to cool before serving.
