- 1 cup all-purpose flour
- 1/2 cup pumpkin puree
- 1/2 cup apple, diced
- 1/4 cup sugar
- 1/4 cup brown sugar
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1/2 tsp cinnamon
- 1/4 cup vegetable oil
- 1 egg
- 1/2 tsp vanilla extract
- 1/4 cup oats
- 2 tbsp brown sugar (for topping)
- 1 tbsp butter (for topping)
- Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
- In a mixing bowl, combine the flour, pumpkin puree, diced apple, sugars, baking powder, baking soda, salt, and cinnamon.
- In another bowl, whisk together the oil, egg, and vanilla.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Spoon the batter into the muffin liners, filling them about 2/3 full.
- In a small bowl, mix the oats, brown sugar, and butter for the streusel topping.
- Sprinkle the streusel mixture on top of the muffin batter.
- Bake for 18-20 minutes or until a toothpick inserted comes out clean.
- Allow to cool before serving.
